The clear bubble on this plate isn’t water or Jell-O, it’s a rice cake dessert. The jelly treat known as shingen mochi is made from spring water which is lightly sweetened and often served with a brown sugar syrup. Apparently, it melts in your mouth, which explains why it only holds the water drop-like shape for 30 minutes before melting. It’s not available to go because of its delicate state, and you can only find it in the Kinseiken stores in the Yamanashi Prefecture.
