Mac and cheese is one of my favorite foods. So is cheesecake. So you can pretty much imagine the noise I made when I realized someone has combined the two into a savory, comforting, happy inducing combination.
Yep, the world now has a Mac and Cheese Cheesecake.
Dan Whelan wrote up this recipe for his cookbook Stuffed: The Ultimate Comfort Food Cookbook: Taking Your Favorite Foods and Stuffing Them to Make New, Different and Delicious Meals.
It’s pretty much what you’d imagine. Dan combines ricotta, cream cheese and cheddar cheese to make the sauce. He piles in a lot of elbow macaroni, some basil and canned tomatoes, switched out the graham cracker crush with bread crumbs and — voilà!
Someone needs to give Dan a medal for, I dunno, boons to humanity.
